Potato Pancakes

This is a great way to use up leftover Garlic Mashed Potatoes. We eat these just about any time of the day. In fact, I’m having some for breakfast now!
Equipment
medium mixing bowl
fork
large spoon for scooping
Ingredients
2 cups leftover mashed potatoes
1 egg, beaten
1/2 cup all purpose flour
1 cup cheese, any flavor
1 clove garlic, minced
Preparation
1. Mix together potatoes, egg, flour, cheese, and garlic. If you need to add more flour, do so in small amounts. You don’t want the pancakes to be dry.
2. Spray a nonstick griddle or pan with nonstick spray and turn on the heat. Make scoop up about 1/4 cup of mixture and flatten in your hand. Lay it on the hot griddle and use back of a spoon or your fingers (careful!) to finish flattening the pancake. Cook five minutes on each side and serve warm. Makes about 6 pancakes.
Variations
Add thin sliced green onions or parsley for color and more flavor.
