Mardi Gras King Cakes

I normally make King Cake the weekend before Mardi Gras, but due to my dear husband’s business travels, we’re going to have our Mardi Gras festivities next weekend. So be on the lookout for the king cake recipe. I make a scratch cake, which actually is a lot of fun. And if you are behind in your planning this year like I am, you can also use a mix or order a cake ready to go for your Mardi Gras party.
The wonderful folks at King Arthur Flour offer a king cake kit that includes instructions, cake mix, almond paste, sugar glaze and yellow, green and purple decorating sugars. This year they are donating $2.00 from the sale of each kit to the Salvation Army’s hurricane-relief effort in New Orleans. Kits cost $18.95 or $17.95 for two or more.
