    It does sound wonderful. I love the flavor of butternut squash especially, but any winter squash dish gets a big thumbs up from me!

  5. I think this is a version of possibly my all time favourite. In SA we traditionally curry butternut or pumpkin soups. Yum

    The flavor of roasted vegetables is amazing, and what a great idea to combine both butternut and acorn squash. I will have to give that a try.

    It looks yummy. For some reason we Filipinos don’t cook squash/pumpkins in soups. I think this would a wonderful addition to our tastebuds.

    I LOVE this soup! I have made it over and over again in the fall and winter months, and we even served at for a starter at Thanksgiving dinner last year for our families- huge hit! I use Smart Balance instead of butter, and skip the whipping cream and sugar to cut down the calories. I also add a pinch of saffron after I saute the leeks and garlic just before I add the broth, squash and herbs which also adds a nice flavor. A handmixer blends this beautifully. I enjoy the winter just because I can make this soup- so great.
