I have made it over and over again in the fall and winter months, and we even served at for a starter at Thanksgiving dinner last year for our families- huge hit! I use Smart Balance instead of butter, and skip the whipping cream and sugar to cut down the calories. I also add a pinch of saffron after I saute the leeks and garlic just before I add the broth, squash and herbs which also adds a nice flavor. A handmixer blends this beautifully. I enjoy the winter just because I can make this soup- so great. I LOVE this soup!
