  10. Wow! So delighted to have you baking the crown with us. As Karen says, it does take some understanding! I had to smile reading your post at so many turns. I especially enjoyed your response to the oven spring. This loaf is the definition of oven spring; you can’t miss it with this bread.
    The thing is once you “get” this bread you do keep baking it over and over.
