    Oh, this sounds EXACTLY as what I wanted the other day. Sadly enough butternut squash is not sold around here, I only ever saw it at one supermarket which by now have sold all they had. I’ll have to remember this untill next fall, when they hopefully will have them again (or maybe I’ll be able to grow my own…) The picture looks delicious too, looks like perfect comfort food to me :)

    I actually have a butternut squash at home and have been trying to decide what to do with it. This sounds delicious!

    Yes, I would absolutely love this dish. I’m a huge fan of butternut squash and think it goes very well with sage. Just yummy.

  5. This is a great recipe! I have made some pasta recipes with roasted squash that call for cubes of squash, but I have always felt like the squash wasn’t completely done and it was kind of uneaven. I’ll have to try the step of mashing, which looks like it creates a better sauce.

    This looks really yummy, and I have it on the stove right now (smells delicious)…it looks like the garlic should go in with the shallots?
